Oven-Roasted Pork Chops & Veggies

This meal is so easy & fast, it’s great for a quick week night dinner. It’s also super cheap & doesn’t use many ingredients. The veggies & spices could  be varied according to your taste preferences if you want to change it up a bit. =)

Cook time: 30-40 Mins.   Total time: 1 Hour or less!


  • Thin-cut boneless pork chops
  • Potatoes
  • Carrots
  • Garlic powder
  • McCormick Worcestershire black pepper seasoning
  • Olive oil
  • Salt & pepper
  • Country gravy *optional

Notice I didn’t include any measurements or amounts? That’s because it’s all up to you! Big family? Make a bunch! Small family? Make less. In our house there are 2 adults, a 3 year old, & a 9 month old (who has 8 teeth & eats everything we do!) I happened to have 4 chops in the freezer, & threw this meal together in no time. =)

Preheat your oven to 425°

Wash the veggies & peel the carrots. We like potato skins around here, but if you don’t, go ahead & peel those too.

Chop them all into similar-sized pieces for even cooking.

In a big bowl, toss the veggies with a drizzle of olive oil, salt, pepper, & garlic powder.


Spread the veggies out on a baking sheet covered in parchment paper or foil.


 Brush olive oil onto the pork chops. Sprinkle them on both sides with salt, garlic powder, & the Worchestershire pepper.


*This stuff was the star of the show!*

Place your chops on another parchment-lined baking sheet.


Place both sheets in the oven – I put my veggies on the bottom rack, closer to the heat. This way, they get more caramelized & yummy!

Cook for about 30 minutes. Take the chops out & loosely cover them with foil to let them rest. Switch the oven over to the broiler, move the veggies up to the top rack, & broil them for about 5-10 minutes to finish them off. *Be sure to keep a close eye on them!*

Serve them with country gravy, if desired.



This would also be delicious with quartered sweet onions, fresh green beans, or brussels sprouts!
